The wide diversity of ingredients used in Washoku is a testament to the natural abundance of the Japanese archipelago, that stretches from north to south with mountains, plains, and the surrounding sea. These ingredients include: life-giving water; mushrooms and wild edible plants intimately connected to the environment; a rich variety of fish, clams, crustaceans, and seaweed; and also vegetables and grains that people brought to Japan and cultivated. This exhibition presents these familiar ingredients through an array of actual specimens and samples, models, and video exhibits in a scientific manner.

Since ancient times, Washoku has developed as it incorporated dietary cultural elements from abroad, and it continues to evolve in the same way today. This exhibition traces its historical development by way of lifelike replicas of dishes from various eras, historical documents and other materials while also focusing on Japan’s version of “Western food,” which dates back to the Meiji period. We also highlight fermented food, a product of the biotechnology of premodern Japan, born of wisdom and experience.
